Grounds for suspicion are an unnaturally bright, “toxic” green (a sign of dyeing), a sharp sour or sulfurous odor (a trace of sulfur fumigation), an abundance of coarse peduncles and debris added for weight, as well as extraneous inflorescences of other plants. Simple guidelines when choosing are an even natural color, intactness of heads, absence of chemical odor, and a correct taste with a “return of sweetness.”

12. Interesting Facts:
